This small bottling was our accidental sweet wine that we held in tank should any of the other wines need a tickle of sugar if ferments went too far. As usual the remaining tank looks pretty smart on its own. Just a little more fruit depths and mouthfeel but not heavy or overly sweet. To be consumed before, during or after anything really.
Holy Moly. This is something new. An RS of 3g/L, and fermented in our new concrete tanks whereby nuance and character is revealed ever so gently. This wine is going to be an amazing wine to follow in the coming decades.
This Bordeaux blend is from Yarra Glen on a similarly aged block to that of the Gruyere site. Predominantly Cabernet Sauvignon and is complimented by Merlot, Cabernet Franc and Petit Verdot.
